AJINOMOTO® strengthens European meat business


“Eat Well, Live Well” is AJINOMOTO’s slogan celebrating its 100th anniversary of the group. Along the slogan, AJINOMOTO® is reinforcing its activity in Europe with ACTIVA® Transglutaminase preparations to develop better meat products for European consumers together with the meat industry.

Consumers want a higher availability of better quality meat products like sausages and ham.

AJINOMOTO® produces a number of Transglutaminase blends for the meat industry e.g. ACTIVA® WM for Emulsified Sausages, ACTIVA® PB for Pork binding, ACTIVA® H-JS and ACTIVA® TG-H-NF for cooked ham. The last couple of years, customers have shown a growing interest in these products. Tailor-made concepts and solutions developed in AJINOMOTO’s regional application development center in France are driving this development.

“With many years of experience in the area of Transglutaminase Application, we have a vast knowledge about how different preparations act in different applications,” explains Alexander Lamm, European Application Manager. Takashi Amagi, who is leading the team, adds: “We also know how to use this knowledge to identify new ACTIVA® solutions which can, even under the harshest conditions, provide the optimum texture development. And also for product like salami, they can deliver a fast and reliable fermentation.”

It is well known that AJINOMOTO® Co., Inc. has commercialized ACTIVA® Transglutaminase preparations in 1993 after establishing industrial manufacturing process and its safety assessments. Currently these "ACTIVA" applications are widely used for production of processed meat, sea food, dairy products, baked goods, noodles, soybean curd, etc, both in term of quality improvement and value-added product development around the world.
